Protein and Oat Muffins – Recipe

  • 1 cup of oat flour
  • 1/2 cup vanilla flavored protein powder
  • 1/4 cup natural sweetener (stevia, erythritol, etc.)
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 2 eggs
  • 1/2 cup almond milk (or your preferred milk)
  • 1/4 cup melted coconut oil
  • 1 teaspoon of vanilla essence
  • Optional: pieces of fresh fruit, chopped nuts, or dark chocolate chips to add extra texture and flavor

Instructions:

  1. Preheat the oven to 180°C (350°F) and prepare a muffin tray with paper liners.
  2. In a large bowl, mix the oat flour, protein powder, sweetener, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the almond milk, melted coconut oil, and vanilla extract. Mix well.
  4. Pour the liquid ingredients over the dry ingredients and mix until well combined. If you decide to add optional ingredients, such as fruit pieces or nuts, add them at this point and mix gently.
  5. Divide the batter between the muffin cups, filling them approximately 3/4 full.
  6. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Once ready, remove the muffins from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
